Vin Santo del Chianti Doc Occhio di Pernice An exclusive excellence, born from the selection of the best Sangiovese grapes, which completes the range of sweet wines from Torre a Cona. The name comes from the estate where the grapes were once left to dry, while the label depicts a detail of an ancient print and celebrates the parade of the Rinuccini, a historic and prominent Florentine family who in the 18th century transformed the previous fortified castle into the current Torre a Cona villa. SANGIOVESE PLOT OF THE MERLAIA VINEYARD Adjacent to the Trebbiano and Malvasia Bianca of the Merlaia vineyard are 5,000 square metres planted with Sangiovese, from which Occhio di Pernice is made. The soil has a clayey texture with a significant amount of stones. Back to Fonti e Lecceta

Harvest: Beginning of October

Vineyard size: 5.000 sqm

Winemaking and ageing: The bunches are left to dry in boxes until January after the harvest; they are then softly pressed. Spontaneous fermentation and ageing in 50 litre oak barrels for 5/6 years, the traditional “Caratelli”

Food Paring: Perfect with dark chocolate, traditional Tuscan desserts and dry biscuits, cheeses or foie gras.

Serving Temperature: Suggested 10 °C
