The Molino degli Innocenti plot is the highest of the entire estate, extending over 9,000 square metres with an average altitude of over 400 metres above sea level. It features a thin, highly draining, schistose soil composed of galestro shale and sandstone. Only Sangiovese is grown here, and the average age of the vines is about 20/25 years.

Production zone: Molino degli Innocenti vineyard, 400 metres a.s.l., south-facing

Soil: Galestro and sandstone

Harvest: End of September – beginning of October

Vineyard size: 9.000 sqm

Winemaking and ageing: Traditional red vinification with alcoholic fermentation in temperature-controlled stainless steel vats for seven days, and subsequent skin maceration. Malolactic fermentation in steel. 12 months in 25 hL Slavonian oak barrels and, for a part, 24 months in second passage French oak tonneaux; at least 1 year in the bottle

Food Pairing: Excellent with red meat, roasts and tartare. Delicate lamb, rabbit and duck.

Suggested Initial Serving Temperature: 16°C
