Time is precious The Winery

Unchanged and full of memories that time has left behind in their walls, for more than five centuries.

Already present in the ancient images that depict the estate, they are believed to have been built before the seventeenth century and therefore before the villa itself was built. It was the Padoa family, who took possession of them at the beginning of the 19th century, who undertook the renovation, leaving the insignia still present as a reminder of the work they had completed.

After the harvest

Currently these wineries have three operational areas to guarantee the entire process of transforming grapes into wine and the consequent ageing. The first area is dedicated to the temperature-controlled tanks used for fermentation and maceration, i.e. employed in the post-harvest phase.

The barrel winery

The barrel winery is accessed on an underground level. This ancient and fascinating space, with ideal humidity and temperature that remain constant throughout the seasons, allows the large oak barrels to hold wines that are aged in perfect environmental conditions.

The Vin Santo winery

In an adjacent building, also historical, another cornerstone of our production, Vin Santo, is fermented and aged.
Here, for about five years, the Vin Santo del Chianti Merlaia and the Vin Santo Occhio di Pernice Fonti e Lecceta are aged in small oak barrels, as tradition dictates.
